Ingredients
  

Plum Mixture

  • 18 Plums (stoned and cut in half)
  • 2 tbsp Corn Flour (or corn starch)
  • 1 Lemon Zest
  • ¼ Ground Cinnamon
  • 170 g Sugar

Sponge Topping

  • 220 g Plain Flour (All Purpose)
  • 3 tsp Baking Powder
  • ¾ tsp Salt
  • 150 g Butter
  • 180 ml Milk
  • 2 Eggs (Lightly beaten)
  • 30 g Sugar

Instructions
 

  • Preheat the oven to 180℃/160℃fan/350℉
  • Combine the plum mixture together in large bowl then place in a oven proof dish.
  • For the sponge combine the sugar, flour, baking powder and salt. Add the butter with your hands or mixture until it resembles breadcrumbs. Add the eggs and slowly add the milk but don't over mix.
  • Drop the batter onto the fruit mixture. Bake for 35 minutes, until golden and the filling is bubbly.
