- 4 Medium Onions (Finely sliced)
- 1½ pints Beef Stock
- 60 g Butter
- 1 clove Garlic (crushed)
- 60 g Grated Cheese (Any hard cheese)
- 1 stick French Bread
- Sherry (Optional)
- Salt and Pepper (to season)
Prevent your screen from going dark whilst making this recipe
Melt the butter in a saucepan and fry the onions and garlic until a light golden colour.
Add the beef stock and a dash of sherry. Season to taste and cook for 30 minutes until the onions are well softened.
Slice the french bread and toast on one side. Place the grated cheese on the other side and grill until cheese has melted.
Serve the soup in bowls with a couple of slices of the french tost on top.
