Instructions
Pre-heat the oven at 180°c Fan Oven.
Sift the flour, baking powder and salt into a bowl, then add the butter and rub into the flour until it resembles breadcrumbs. Add the sugar abd mix well.
225 g Plain Flour, 2½ tsp Baking Powder, Salt Pinch of, 40 g Unsalted Butter, 75 g Caster Sugar
Mix the egg, milk and cream together, then add to the mixture to form a dough.
1 Egg, 50 ml Milk, 50 g Coconut Cream or Clotted Cream
On a lightly floured surface, form a dough and cut into discs with your cutter and about 2cm thick. Transfer to a baking tray and brush with milk.
Bake in the oven for about 15 minutes or until golden brown.
Allow to cool slightly before eating.
