Equipment

1 Frying Pan with lid

Ingredients
  

  • 1 Red Pepper (Sliced)
  • 1 Green Pepper (Sliced)
  • 1 Clove of Garlic (Chopped)
  • 1 Packet of Noodles
  • 1 tbsp Olive Oil
  • 1 Spring Onion

Thai Peanut Sauce

  • 400 g Coconut Milk
  • 3 tbsp Vinegar
  • 5 tbsp Peanut Butter (Crunchy or smooth)
  • 2 tbsp Brown Sugar
  • 1 tbsp Soy Sauce (or Tamari Sauce)
  • 1 tbsp Red Thai Sauce (or Chilli Sauce)

Instructions
 

  • Cook the noodles as per the packet instructions and drain. Set aside.
  • In a bowl, mix the vinegar, brown sugar, peanut butter, soy sauce, Thai sauce and coconut milk together until it's nice and creamy.
  • Heat the oil in a frying pan and fry the garlic on a medium heat. Add the red pepper, spring onions and cook for 2 minutes. Add the noodles and pour over the Thai peanut sauce. Mix together so the noodles are fully coated. Cover with a lid and simmer for 5 minutes or until everything is heated through.
