Instructions
You will need a 5 in x 6.5 wide loaf tin. Preheat the oven to 160°c/ 180°c/Gas 4. Grease and line the base of the tin.
Place all the sponge ingredients in a bowl and use an electric whisk to blend everything together for 2 minutes. Turn the mixture into the prepared tin and level the top.
Bake in the oven for 40 - 45 minutes or until the cake shrinks from the sides. Leave to cool in the tin.
Grapefruit Icing
In a bowl, add the grapefruit juice to the icing sugar a bit at a time to give a runny consistency but thick enough to set. Drizzle over the cake any way you like. Sprinkle with grapefruit zest and leave to set before cutting into pieces.
