Easy Grapefruit Cake

Ingredients
  

  • 225 g Baking Spread (Cold)
  • 225 g Caster Sugar
  • 275 g Self-Raising Flour
  • 2 tsp Baking Powder
  • 4 Eggs
  • 2 tbsp Greek Yoghurt
  • 2 tbsp Grapefruit Juice
  • Zest of 2 Grapefruits

Lemon Icing

  • 2 - 3 tbsp Grapefruit juice
  • 180 g Icing Sugar (Confectioners Sugar sifted)
  • Zest of 1 Grapefruit

Instructions
 

  • You will need a 5 in x 6.5 wide loaf tin. Preheat the oven to 160°c/ 180°c/Gas 4. Grease and line the base of the tin.
  • Place all the sponge ingredients in a bowl and use an electric whisk to blend everything together for 2 minutes. Turn the mixture into the prepared tin and level the top.
  • Bake in the oven for 40 - 45 minutes or until the cake shrinks from the sides. Leave to cool in the tin.

Grapefruit Icing

  • In a bowl, add the grapefruit juice to the icing sugar a bit at a time to give a runny consistency but thick enough to set. Drizzle over the cake any way you like. Sprinkle with grapefruit zest and leave to set before cutting into pieces.
