Ingredients
  

  • 400 g Cherry Tomatoes (Halved)
  • 2 tbsp Dry Sherry
  • 2 Cloves of Garlic (Keep whole)
  • 1 Shallot (Finely chopped)
  • 1 tbsp Sherry Vinegar
  • Salt to taste
  • Coriander (or Parsley)

Instructions
 

  • Preheat the oven to 180°c fan/200°c/Gas 6.
  • Half the cherry tomatoes and put in an oven-proof dish with the dry sherry and the whole cloves of garlic. Cover with foil and roast for 30 minutes.
  • Place the chopped shallots in a bowl with a pinch of salt and sherry vinegar. Set aside.
  • Leave tomatoes to cool. Mash the garlic and add to the bowl of shallots. Add the tomatoes and mix through. Garnish with coriander or parsley.
