- 400 g Cherry Tomatoes (Halved)
- 2 tbsp Dry Sherry
- 2 Cloves of Garlic (Keep whole)
- 1 Shallot (Finely chopped)
- 1 tbsp Sherry Vinegar
- Salt to taste
- Coriander (or Parsley)
Prevent your screen from going dark whilst making this recipe
Preheat the oven to 180°c fan/200°c/Gas 6.
Half the cherry tomatoes and put in an oven-proof dish with the dry sherry and the whole cloves of garlic. Cover with foil and roast for 30 minutes.
Place the chopped shallots in a bowl with a pinch of salt and sherry vinegar. Set aside.
Leave tomatoes to cool. Mash the garlic and add to the bowl of shallots. Add the tomatoes and mix through. Garnish with coriander or parsley.
