Cinnamon, Date and Banana Bread Muffins

Ingredients
  

  • 280 g Margarine (or butter softened)
  • 280 g Granulated Sugar (or caster)
  • 4 Eggs (beaten)
  • 2 tsp Vanilla Extract
  • 280 g Self-Raising Flour
  • 2 tsp Baking Powder
  • 6 Ripe Bananas (Peeled and mashed)
  • 100 g Chocolate Chips
  • 100 g Dates
  • 100 g Chopped Nuts

Instructions
 

  • Preheat the oven to 180℃/160℃fan/Gas 4/350℉. Place muffin cases in the muffin tins.
  • Beat the sugar and butter together using an electric whisk until light and fluffy.
  • Gradually add the eggs and vanilla extract ( a little at a time). Fold in the flour, baking powder, cinnamon, and mashed bananas. Mix thoroughly. Finally add the chopped dates and nuts and mix again.
  • Pour the mixture into the muffin cases about ⅔ full. Bake for 26 minutes, or until cooked through.
  • Leave in the tin for 10 minutes, then remove to a wire rack to completely cool.
