Chicken Mince Meatloaf

Air fryer chicken meatloaf is a delicious and healthy twist on the classic comfort food. This recipe combines lean mince chicken with cornflour, eggs, and a blend of savoury seasonings to create a moist and flavourful meatloaf.

Ingredients
  

  • 500 g Chicken Mince
  • 2 lrg Eggs
  • 3 tbsp Corn Flour
  • 1 tsp Ground Black Pepper
  • 1 Onion (Chopped)
  • 1 tsp Salt
  • 1 tsp Tarragon
  • 1 tsp Paprika

Instructions
 

  • Fully line a 1lb loaf tin. Fry the onion in a little oil on medium heat until softened. Set aside.
  • In a bowl add rest of the ingredients then add the onions. Mix together by hand and transfer to the loaf tin. Level out with the back of a tablespoon and place in the air fryer.
  • Set the air fryer to 180℃/350℉ and cook for about 32 minutes. Check with a meat thermometer in the middle to see if it's cooked, it should be at least 74℃/165℉.
  • Let it stand for 5 minutes before removing from the tin. Slice and serve with your favourite side dish.
