Apple Amber - Irish Baked Apples Recipe

Ingredients
 
 

Apple Filling

  • 900 g Cooking Apples (Peeled , cored and sliced or use ready made apple puree)
  • 30 ml Water
  • 50 g Butter
  • 100 g Caster Sugar
  • 6 tbsp Stale cake crumbs (plain cake)
  • 2 tsp Ground Cinnamon
  • 4 Egg yolks

Meringue Topping

  • 4 Egg Whites
  • 150 g Caster Sugar
  • 1 tbsp Granulated Sugar (to sprinkle on top (optional))

Instructions
 

Apple Filling

  • Put the apples in a saucepan with water and butter. Cook until soft and pulpy. Beat until smooth.
  • Add the sugar, cake crumbs, cinnamon and egg yolks. Mix well. Transfer to a ovenproof dish.
  • Preheat the oven to 150°c/130°c Fan/300°F.

Meringue

  • Put the egg whites into a clean bowl. Beat until stiff and peaky (when the bowl is turned upside down, the whites should stay where they are).
  • Gently fold in the caster sugar with a large metal spoon.

Assemble

  • Add the meringue on top of the apple filling. Sprinkle with granulated sugar if using.
  • Bake in the oven for 30 minutes or until the meringue is light gold. Serve with fresh cream.
