Apple Filling
- 900 g Cooking Apples (Peeled , cored and sliced or use ready made apple puree)
- 30 ml Water
- 50 g Butter
- 100 g Caster Sugar
- 6 tbsp Stale cake crumbs (plain cake)
- 2 tsp Ground Cinnamon
- 4 Egg yolks
Meringue Topping
- 4 Egg Whites
- 150 g Caster Sugar
- 1 tbsp Granulated Sugar (to sprinkle on top (optional))
Apple Filling
Put the apples in a saucepan with water and butter. Cook until soft and pulpy. Beat until smooth.
Add the sugar, cake crumbs, cinnamon and egg yolks. Mix well. Transfer to a ovenproof dish.
Preheat the oven to 150°c/130°c Fan/300°F.
Meringue
Put the egg whites into a clean bowl. Beat until stiff and peaky (when the bowl is turned upside down, the whites should stay where they are).
Gently fold in the caster sugar with a large metal spoon.
