Cook the noodles as per the packet instructions and drain. Set aside.
In a bowl, mix the vinegar, brown sugar, peanut butter, soy sauce, Thai sauce and coconut milk together until it's nice and creamy.
Heat the oil in a frying pan and fry the garlic on a medium heat. Add the red pepper, spring onions and cook for 2 minutes. Add the noodles and pour over the Thai peanut sauce. Mix together so the noodles are fully coated. Cover with a lid and simmer for 5 minutes or until everything is heated through.
