- 2 Shallots (Finely Chopped)
- 300ml Chicken Stock
- 2 Oranges (Juiced and the zest of 1 orange)
- Salt and Pepper
Put the shallots, chicken stock and juice of oranges in a saucepan, and bring to the boil.
Simmer until reduced by half, then season with salt and pepper.
Push through a sieve, add the zest of orange and reheat gently. Serve hot.
