Equipment

Ingredients
  

  • 100 g Butter
  • 100 g Chocolate (dark or good quality)
  • 1 Egg
  • 40 g Caster Sugar
  • 100 g Digestive Biscuits (Coarsely crushed)
  • 25 g Walnuts (plus extra to decorate)
  • 25 g Glace Cherries (chopped, plus extra to decorate)
  • 1 tbsp Brandy (or sherry)

Instructions
 

  • Put the butter and chocolate in a bowl and heat for a few seconds in the microwave until melted. Set aside.
  • Beat the egg and sugar together until light and fluffy, then stir in the melted chocolate and butter mix.
  • Fold in the biscuits, nuts and cherries and finally, the brandy.
  • Spread the mixture in a square tin fully lined with baking paper. Put it in the refrigerator to set, then cut into small slices when ready.
