Easy Chocolate Brandy Cake - No Bake Dessert

An indulgent dark chocolate brandy after dinner dessert! Too good to say no.

- 100 g Butter
- 100 g Chocolate (dark or good quality)
- 1 Egg
- 40 g Caster Sugar
- 100 g Digestive Biscuits (Coarsely crushed)
- 25 g Walnuts (plus extra to decorate)
- 25 g Glace Cherries (chopped, plus extra to decorate)
- 1 tbsp Brandy (or sherry)
Put the butter and chocolate in a bowl and heat for a few seconds in the microwave until melted. Set aside.
Beat the egg and sugar together until light and fluffy, then stir in the melted chocolate and butter mix.
Fold in the biscuits, nuts and cherries and finally, the brandy.
Spread the mixture in a square tin fully lined with baking paper. Put it in the refrigerator to set, then cut into small slices when ready.
