In a wok or deep frying pan add the oil, onions and garlic. Fry on a medium to high heat for a minute.
Add the prawns and continue to cook for about 2 minutes. Add any vegetables you are using, salt, pepper and Chinese wine and stir through.
Add the egg and leave to cook before scrambling. Add the sesame oil, rice, soy sauce and oyster sauce. Stir through until hot and serve with chopped spring onion.
