Ingredients
  

  • 400 g Tin of Butter Beans
  • 1 Lemon (Zest and juice)
  • 1 Clove of Garlic (Crushed)
  • 6 Sun-dried tomatoes
  • 2 tbsp Sun-dried tomato oil (from the jar)
  • Few rocket leaves (or basil)

Instructions
 

  • Drain the can of butter beans but reserve 1 tbsp of the liquid.
  • Put both in the food processor with the zest of lemon and garlic. Whizz to a smooth paste, then add the oil and juice of the lemon. Whizz again until all mixed through.
  • Top with sun-dried tomatoes and a few rocket leaves.
