Ingredients
  

  • 300 g Basmati Rice
  • 400 ml Coconut Milk
  • 200 ml Water
  • ½ tsp Salt
  • 400 g Black Eyed Peas
  • 1 Lime (Juiced)
  • 4 Spring Onions

Instructions
 

  • Place the rice, milk and water in a pan and bring to a boil. Cover with a lid and cook for a further 8 minutes or until the liquid is absorbed.
  • Add the drained black eyed peas, lime juice and spring onions and cook with the lid on for 5 minutes until everything is warmed through. Keep the lid on until needed, then serve.
