Easy Healthy Beetroot Coleslaw Recipe

- 3 Beetroots
- ½ White Cabbage
- 1 lrg Carrot
- 3 sml Onions
- 2 Green Chillies
- 3 Cloves of Garlic (Crushed)
- 200 g Mayonnaise
- 2 tbsp Olive Oil
- 6 tbsp Salad Cream
- Salt and Pepper to season
Finely chop all your vegetables or use a food processor and place them in a large bowl.
Add the olive oil, mayonnaise, salad cream and salt and pepper and mix thoroughly until everything is coated in the dressing.
Cover and refrigerate until ready to serve. Enjoy!
