Pour the coconut milk into a large bowl along with a pinch of salt. Add the flour and mix thoroughly to create a dough.
400 g Coconut Milk, 450 g Self-Rasing Flour, Salt
On a floured surface divide into 8 balls and flatten with your hands to about 1cm thickness. Prod with your fingers to make a rippled effect.
On a medium heat add some olive oil and butter to a frying pan and add a couple of flatbreads. Heat for 2 -3 minutes on each side until puffed up and fluffy. Repeat until all flatbreads are cooked.
