Put the flour and butter in a large mixing bowl and rub together until it resembles breadcrumbs.
Stir in the sugar, currants and a pinch of slat in to the mixture.
In a small bowl beat the egg and add the milk, then pour into the dry ingredients. Mix together to form a dough. Don't over mix or the cakes will become tough.
Heat your frying pan and set to a medium to low heat.
Roll out the dough to about 0.5cm think and use a 7cm round cutter and cut out your welsh cakes.
Place a few round onto the frying pan and cook on one side for 1-2 minutes until a nice golden colour. If it is too dark turn down the heat Repeat on the other side.
Repeat for the rest of the cakes then serve warm and dust with caster sugar.
