Instructions
Break up the chocolate into pieces in a bowl and place in the microwave a few seconds at a time until it's melted.
Place the butter in a bowl and whisk until nice and creamy. Add half of the sifted icing sugar and whisk on a low setting until mixed in, then add the rest.
Add the melted white chocolate and beat until nice and creamy. Add the vanilla extract if using, and mix again.
