Homemade Nutty Chocolate Bars

Brownie tin 16cm x 16cm tin or use a 2lb loaf tin

  • Process the the walnuts in a food processor then add the dates to combine.
  • Press the mixture into a tin lined with baking paper . I used a 16cm x 16cm brownie tin or you can use a 2lb loaf tin. Put in the freezer while you make the next mixture.
  • Combine the cashew nuts, coconut oil, syrup and vanilla essence in the food processor until smooth and creamy. Add this layer to dish and return to the freezer.
  • Meanwhile melt the dark chocolate in bursts of 30 seconds in the microwave.
  • Pour on top of the nutty base and leave to set for about 30 minutes and slice into bars. To add more chocolate dip the bottom and sides into a bowl of melted chocolate and leave to set.

Notes

TIP: When cutting the bars cut them just before the chocolate sets completely or if already set put the knife under hot water then cut to prevent cracking of the chocolate.
