Easy Tomato Risotto | Kid's Favourite

Ingredients
  

  • 25 g Butter
  • 1 Onion
  • 3 Clove of Garlic
  • 300 g Risotto Rice
  • 700 ml Vegetable Stock
  • 400 g Tinned tomatoes
  • 50 g Parmesan Cheese (vegan or vegetarian alternative)

Instructions
 

  • Melt the butter in a deep-sided frying pan and fry the onion for 3 minutes until softened. Add the garlic and cook for another minute. Tip in the rice and mix well.
  • Add the tomatoes and stock to the rice, season with salt and pepper and stir to combine. Cover with a lid and bring to the boil for 5 minutes. Continue to stir and simmer for 15 minutes. Stir through the cheese and leave to stand for a few minutes and serve.
