Easy Mary Berrys Eve's Pudding -Baked Apple Recipe

Ingredients
  

  • 500 g Cooking Apples ( peeled and sliced or cubed)
  • 90 g Dark Brown Sugar
  • 1 Lemon (Zest and juice)

Sponge Topping

  • 125 g Baking Spread
  • 125 g Caster Sugar
  • 2 Eggs
  • 125 g Self-Rasing Flour
  • 1 tsp Baking Powder

Instructions
 

  • Grease the oven-proof dish and arrange the apples on the bottom. Sprinkle over the brown sugar and the lemon zest and juice.
  • Put the baking spread, sugar, eggs, flour, and baking powder in a large bowl and beat until smooth. Spoon on top of the apples, and level out with the back of a tablespoon.
  • Bake in a preheated oven at 160°cfan/180°c/Gas 4 for 45 minutes until it is golden and springy to touch. Serve hot with custard or cream!
