Instructions
Preheat the oven at 180°c fan/200°c/Gas 6.
Put the beef into a roasting tin, brush all over with oil and season with salt and pepper. Add the onion quarters to the tin. Place in the oven for 20 minutes.
Meanwhile prepare your yorkshire pudding mixture and set aside.
After the beef has been roasting for 20 minutes, baste it with the juices from the tin and lower the temperature by 20°c and place it back in the oven.
Baste frequently for a further 2 hours (for a well-done roast), reduce time by 15 minutes if you want medium.
Transfer the beef to a carving board, cover with foil and leave to stand in a warm place.
Increase the oven temperature to 200°c fan and bake the Yorkshire puddings.
While they are cooking, make the gravy in the roasting.
Serve the beef with the Yorkshire puddings, gravy, horseradish and veg of choice.
