Equipment

1 Roasting Tin

Ingredients
  

  • 3.25 kg Prime Beef
  • Vegetable Oil (for brushing)
  • Salt and Pepper
  • 1 Onion (quartered)

Instructions
 

  • Preheat the oven at 180°c fan/200°c/Gas 6.
  • Put the beef into a roasting tin, brush all over with oil and season with salt and pepper. Add the onion quarters to the tin. Place in the oven for 20 minutes.
  • Meanwhile prepare your yorkshire pudding mixture and set aside.
  • After the beef has been roasting for 20 minutes, baste it with the juices from the tin and lower the temperature by 20°c and place it back in the oven.
  • Baste frequently for a further 2 hours (for a well-done roast), reduce time by 15 minutes if you want medium.
  • Transfer the beef to a carving board, cover with foil and leave to stand in a warm place.
  • Increase the oven temperature to 200°c fan and bake the Yorkshire puddings.
  • While they are cooking, make the gravy in the roasting.
  • Serve the beef with the Yorkshire puddings, gravy, horseradish and veg of choice.
