Instructions
Heat the oven at 220c/200c fan/Gas 7
Cut your potatoes into two-three even-sized pieces. Put in a pan of salted water and bring to the boil and cook for 7 minutes. Drain, leave to dry then return to the pan, cover with a lid and shake gently.
Meanwhile, heat a layer of fat in a large roasting tin. When hot, add the potatoes and turn to coat. Drain off any excess and roast at the top of the oven turning halfway for 1 hour until golden.
