Air Fryer Sweet And Sour Fish

Ingredients
  

Fish Coating

  • 300 g Fish (Cod or Coley)
  • ¼ tsp Salt
  • ½ Egg (beaten)
  • 40 g Cornflour
  • Drizzle of oil (vegetable)

Sweet and Sour Sauce

  • 300 ml Water
  • 6 tbsp Ketchup
  • 4 tbsp Cornflour (mixed with 4 tbsp of water)
  • 6 tbsp Sugar
  • 6 tbsp Vinegar
  • Pineapple juice (from a tin of 4 pineapple rings)

Vegetables

  • 1 tbsp Oil (vegetable)
  • 4 Pineapple Rings (Chopped into chunks (keep the juice for the sauce))
  • ½ Onion (Cut into chunks)
  • ¼ Red Pepper (Cut into chunks)
  • ¼ Green Pepper (Cut into chunks)

Instructions
 

  • Prepare the veg and chop the fish into small to medium pieces.
  • Put the fish into a plastic container that has a lid. Season the fish with salt and pepper. Pour half of the egg in and coat. Mix in the cornflour. Put the lid on a shake until everything is coated. Repeat again and add more cornflour if needed. Drizzle very lightly with oil. Not a lot is needed.
  • Set the air fryer to 180℃ and add the coated fish pieces. Set the time to 12 minutes. (My pieces were about 2 inches, and this is the time it took to cook) Turn the pieces halfway through cooking.
  • Meanwhile, make the sweet and sour sauce. In a bowl, add the water, sugar, ketchup, vinegar and pineapple juice and mix together. Transfer to a saucepan and heat for 2 minutes. Add the cornflour mixture and cook until it starts to thicken. If it gets too thick add some hot boiled water.
  • In a clean frying pan, fry the onions, peppers and pineapple chunks until heated through (about 2 minutes). Add the cooked fish and sauce and mix through before serving. Enjoy with rice quinoa or noodles.
