- 2 Shallots (Finely chopped)
- 30 g Butter
- 1 tbsp Plain Flour
- 300 ml Chicken Stock
- 75 ml Dry White Wine
- 3 tbsp Clear Honey
- 1 tbsp White Wine Vinegar
- Salt and Pepper
- 3 tbsp Parsley (Finely chopped)
Cook the shallots in the butter until soft. Add the flour and stir for 1 minute.
Blend in the stock and wine. Boil and stir until thick.
Add the honey, vinegar and salt and pepper and cook for 1 minute. Push through a sieve and add the parsley.
