Ingredients
  

  • 8 Chicken Thighs (Boneless and cut each thigh into 3 pieces)
  • ½ Leek (Chopped)
  • 2 Green Peppers (Chopped)
  • 1 sml Cauliflower (Roughly Chopped)
  • 2 Cloves of garlic (chopped)
  • 1 Bay leaf
  • ¼ tsp Rosemary
  • ¼ tsp Thyme
  • ¼ tsp Lemon Thyme
  • 2 tbsp Tomato Puree
  • 350 ml Creme Fraiche
  • Olive Oil
  • 2 tsp Bouillon Powder (Mixed in a cup of hot water)
  • 2 tsp Chilli sauce (optional)

Instructions
 

  • Grease the cast iron pot with olive oil. Add the chicken pieces. Mix the bouillon stock and tomato puree together and add to the dish.
  • Add the chopped leek, cauliflower, herbs, spices and garlic. Add the creme fraiche and give it a stir. Add a little water if necessary and put the lid on. Place on your lit wood burner for 2 hours. After 1 hour of cooking give it a stir.
