Ingredients

  • 3.3 kg Pears (Peeled, cored and cut in half)
  • 350 g Sugar
  • 3 Lemons (Juiced)
  • 1 tsp Salt
  • 2.5 litres Water

Instructions

  • Take a large bowl and fill it half way with cold water and add the lemon juice and salt.
  • In a stainless steel pot fill with 2.5 litres of water and add the sugar. Meanwhile, peel, cut in half and core the pears and add each one to the large bowl of water and lemon juice to prevent them from browning.
  • Bring the pot of water and sugar to the boil. Meanwhile, sterilise the jars and lids.
  • When the water starts to boil, add the pears. Let them boil for about 5 to minutes or until partially soft. Using a slotted ladle add the pears to the jars.
  • Use a sterilsed jug and scoop the boiled water from the pan and pour into the jars making sure you cover the pears, then seal quickly with the lid.
