Mix the flour and salt in a bowl and make a well in the centre. Add the water and oil in the middle and mix until it forms a dough. Cover and leave to rest for 30 minutes.
Divide the dough into 4 equal parts, then heat the pan with a little oil.
On a lightly floured surface, roll out the dough to the size of your pan. When the pan is hot add the flatbread and cook for 1-2 minutes or until golden, and it puffs up then flip over and cook the other side. Place on a warm plate and cover with a tea towel. Repeat the process for the rest of the flatbreads.
