Easy Chicken With Stir Fry Rice Noodles (Vermicelli)

Ingredients
  

  • 200 g Vermicelli
  • 300 g Chicken Breast (Chopped into little pieces)
  • 3 Carrots (cut into fine strips)
  • 1 Courgette (or cucumber cut into fine strips)
  • 2 Garlic Cloves
  • 1 tsp Ginger
  • 2 tbsp Vegetable Oil
  • Sesame seeds (Sprinkling)

Chicken Marinade

  • 2 tbsp Soy Sauce (or Tamari Sauce)
  • 2 tbsp Sesame Oil
  • 1 tsp Ground Black Pepper

Stir Fry Sauce

  • 4 tbsp Oyster Sauce
  • 4 tbsp Soy Sauce (or Tamari)
  • 2 tsp Sesame Oil

Instructions
 

  • Cook the noodles as per packet instructions and keep aside.
  • In a bowl, mix the marinade ingredients together and add to the chicken pieces. In a separate bowl mix the stir fry sauce together and keep it aside.
  • In a frying pan, heat the oil on high heat and fry the onions and courgettes for 2 minutes. Add the marinated chicken, ginger and garlic and fry until cooked. Finally, add the carrots and noodles and stir fry sauce. Fry for 2 to 3 minutes. Serve with a sprinkling of sesame seeds.
