In a bowl, add the chicken, salt, pepper and the beaten egg. Mix through.
Coat a plate with cornflour and coat each piece of chicken.
Heat the oil in a pan to high heat. When the oil is hot, fry the chicken for about 3 minutes until golden. Set aside.
In a bowl, add the water, sugar, ketchup, vinegar and pineapple juice and mix together. Transfer to a pan and heat for 2 minutes. Add the cornflour mixture and cook until it starts to thicken. If it gets too thick just add some hot boiled water.
In a clean frying pan, fry the onions, peppers and pineapple chunks until heated through (about 2 minutes). Add the chicken and sauce and mix through before serving. Enjoy with rice or noodles.
