Using your mini chopper mix the garlic and salt. Add the pine nuts and continue until broken down. Add the rocket and mix to a paste. Finally add the cheese and mix again.
1 Clove of Garlic, ¼ tsp Salt, 40 g Pine Nuts, 90 g Wild Rocket, 90 g Parmesan Cheese
Gradually add the olive oil and mix well.
190 ml Virgin Olive Oil
