Ingredients
 
 

  • 1 Clove of Garlic
  • ¼ tsp Salt
  • 40 g Pine Nuts
  • 90 g Wild Rocket
  • 90 g Parmesan Cheese (or cheese of choice)
  • 190 ml Virgin Olive Oil

Instructions
 

  • Using your mini chopper mix the garlic and salt. Add the pine nuts and continue until broken down. Add the rocket and mix to a paste. Finally add the cheese and mix again.
    1 Clove of Garlic, ¼ tsp Salt, 40 g Pine Nuts, 90 g Wild Rocket, 90 g Parmesan Cheese
  • Gradually add the olive oil and mix well.
    190 ml Virgin Olive Oil
  • Toss through freshly cooked pasta or freeze for another day.

If you haven't got a mini chopper use a Pestle and Mortar.
