Easy Pea And Ham Soup (Mary Berry)

Ingredients
  

  • 50 g Butter
  • 1 Onion (Chopped)
  • 1 Celery Stick (Chopped)
  • 750 ml Chicken Stock
  • 500 g Frozen Peas
  • 2 tbsp Fresh Chives (Snipped)
  • 200 g Roast Ham off the bone (or Ham Hock)
  • Salt
  • Ground Black Pepper

Instructions
 

  • Melt the butter in a large stainless steel pan. Add the onion and celery and fry for 8 - 10 minutes on a medium heat until softened but not browned. Pour in the stock and bring to the boil on a high heat. Stir in the frozen peas and bring back to the boil, then reduce the heat and simmer for 3 minutes or until they are just cooked.
  • Using a hand held blender or food processor, puree the soup with the chives until smooth. Shred the ham into small pieces and drop into the soup. Reheat briefly and and season with salt and pepper.
  • Serve with fresh warm crusty bread or croutons.

Notes

Add the peas to the stock and start to time the cooking once the stock has returned to the boil. Fast cooking makes the peas soft enough to puree easily without losing its colour.
