Place the water in a bowl and add the gelatine powder and stir. It will look a bit spongy. Stand the bowl over hot water (not boiling) and stir until dissolved.
60 ml Cold Water, 20 ml Powdered Gelatine
Add the liquid glucose and glycerine and stir until blended and runny.
125 ml Liquid Glucose, 15 ml Glycerine
Sieve the icing sugar in a large bowl and slowly pour in the liquid ingredients string consistently. You can also do this in your electric mixer.
1 kg Icing Sugar
Place your sugar paste onto a surface dusted with icing sugar and knead until smooth. If it's too sticky add more icing sugar.
Use immediately or wrap in clingfilm and store until needed.
