  • Place the water in a bowl and add the gelatine powder and stir. It will look a bit spongy. Stand the bowl over hot water (not boiling) and stir until dissolved.
    60 ml Cold Water, 20 ml Powdered Gelatine
  • Add the liquid glucose and glycerine and stir until blended and runny.
    125 ml Liquid Glucose, 15 ml Glycerine
  • Sieve the icing sugar in a large bowl and slowly pour in the liquid ingredients string consistently. You can also do this in your electric mixer.
    1 kg Icing Sugar
  • Place your sugar paste onto a surface dusted with icing sugar and knead until smooth. If it's too sticky add more icing sugar.
  • Use immediately or wrap in clingfilm and store until needed.
