Pulse the cauliflower in a food processor unitl it resembles rice.
Fry the bacon until brown and crispy.
In a speparate frying pan add a splash of oil and add the eggs. Fry them without stirring until cooked through. Remove and place on a chooping board. Roll up and slice into strips. Set aside.
Add the coconut oil to the cooked bacon and increase the heat to high. Add the onions, ginger and carrots and stir fry for 1 minute.
Add more oil if needed, then add the cauliflower rice. Stir fry for 4 minutes.
Add the rest of the ingredients, including the eggs. Fry until the frozen peas are defrosted and hot.
Serve into bowls topped with sesame seeds and a splash of lime.
