One Pot Sausage And Kale Pasta

Ingredients
  

  • 2 tbsp Olive Oil
  • 8 Sausages (Cut into small pieces)
  • 1 Onion (Diced)
  • 1 Red Pepper (Diced)
  • 3 Cloves of Garlic (Crushed)
  • 2 tbsp Tomato Puree (or paste)
  • 2 Cups Chopped Kale (washed and stem removed)
  • 400 g Tinned Chopped tomatoes
  • ½ tsp Dried Basil
  • ¼ tsp Dried Oregano
  • 350 g Pasta
  • 475 ml Vegetable Stock
  • Salt and Pepper (to season)

Instructions
 

  • Heat the oil in the pan over medium heat and fry the onions and sausages until the onions are soft. Add the peppers and garlic. Cook until the sausages are cooked through (about 7 mins).
  • Add tomato puree and stir. Add in the chopped kale, basil, oregano, salt and pepper and tinned tomatoes. Stir for 1 minute.
  • Add the pasta and vegetable stock, stir and cover with the lid. Cook on medium heat for 15 minutes or until pasta is cooked.
  • Top with your favourite cheese and fresh basil if you have any.
