Easy Rocket And Bacon Quiche

This tasty rocket and bacon quiche is simple enough for beginners yet results in a filling and flavorful dinner for the whole family. It’s made with just a few ingredients, including eggs, bacon, rocket leaves, cheese and simple pastry dough. Plus, it only takes about 15 minutes of preparation time before it goes into the oven – so let’s get cooking!

Quiche is definitely a favourite in our house. Rocket and bacon quiche topped with cheddar cheese is a perfect lunch idea or picnic dish that is both delicious and easy to make. The peppery flavour of the rocket gives a nice sharp bite that contrasts well with the savoury bacon and rich cheddar cheese. This quiche is easy to prepare and can be enjoyed at room temperature. It’s great for on-the-go meals or to pack for a picnic. The combination of flavours is sure to tantalize your taste buds, and the ease of preparation will make it a go-to dish for any mealtime.

Ingredients

Pastry

  • 400 g Plain White Flour
  • 100 g Wholemeal Flour
  • 250 g Butter
  • 7 tbsp Water
  • ½ tsp Ground Black Pepper
  • 1 tsp Dry Veggie Stock Cube (optional)

Quiche Filling

  • 8 Eggs
  • 100 ml Milk
  • 100 ml Plain Greek Yoghurt
  • 250 g Cheese (Cheddar)
  • Mixed Herbs (optional)
  • Salt and Pepper
  • Paprika
  • 25 g Rocket (Finely chopped)
  • 2 Rashers of Smoked Bacon (Roughly chopped)

How to make bacon quiche with rocket and cheese

  • Preheat oven to 180° c Fan/200°c/ 392°F.
  • Add butter to the flour for the pastry and rub in until it resembles breadcrumbs. Add the pepper and stock powder and slowly add in the water until it forms a dough. I prefer to use my electric mixer as there’s less mess.
  • Roll out to about 5mm thick and carefully place in greased quiche dish. Mine is a large dish, so if you have small dishes, it will make 2, but you may need extra filling ingredients.
  • Prick the pastry all over with a fork and blind bake for 10 – 15 mins in the oven until dry and slightly golden.
  • Mix the eggs with the milk and yoghurt in a bowl. Mix in the rocket, salt, and pepper, then add to the pastry case.
  • Top with the chopped bacon, grated cheese, paprika and mixed herbs if using.
  • Bake in the oven for about 35 – 40 mins, depending on the size of your dish. Serve your lovely quiche hot or cold.

I love leftover quiche because it’s great to grab and go, perfect for lunch boxes and picnics. To keep it fresh, wrap it in tin foil or in an airtight container and keep it in the fridge for up to 3 days.
